Tasting Notes: Pink grapefruit, fresh lime, floral, juicy gooseberry, capsicum (bell pepper) and a subtle smoky note combine to produce a complex, intriguing nose. The palate is zesty, concentrated, dry and chalky with nettle, green capsicum and citrus flavours. it is fleshy and textural and leaves a delicious lasting impression.
Winemaker's Notes: Fermented 80% in stainless steel tank, 20% wild fermentation in old French oak barrels. The tank fermentation provided lifted fruit notes so typical of Marlborough whereas the wild fermentation in the old barrels provides texture and enhances the wine's mineral tones. The wine was allowed to rest on the yeast lees post fermentation for five months before bottling.
Cellaring: Cellar for up to four years.
Food Match: Vegan friendly wine - Wonderful with a Greek salad, seafood dishes, oysters, fresh green herbs, tomato-based sauces and of course, fresh Marlborough green-lipped mussels.
